Once-Touted Fat Now Demonized
By Kim Severson and Melanie Warner
New York Times
An artificial fat once embraced as a cheap and seemingly healthy alternative to saturated fats like butter or tropical oils, partially hydrogenated oil has been the food industry’s favorite cooking medium for decades. It makes french fries crisp and sweets creamy, and keeps packaged pastries fresh for months.
But scientists contend that trans fat, a component of the oil, is more dangerous than the fat it replaced. Studies show trans fat has the same heartclogging properties as saturated fat, but unlike saturated fat, ...

Kids’ cholesterol levels have decreased in the past decade, according to a government study.
The results are surprising, given that the childhood obesity rate didn’t budge. How can that be?
Some experts think that while most kids may not be eating less or exercising more, they may be getting fewer trans fats. That’s because the artery-clogging ingredient has been removed or reduced in many processed or fried foods such as doughnuts, cookies and french fries.
“That’s ...

A new study is raising concern about chronic exposure to an artificial butter flavoring ingredient used in some margarines, microwave popcorn, snack foods, candy, baked goods, pet foods and other products.
The study, published in the American Chemical Society journal Chemical Research in Toxicology, has found the ingredient – diacetyl (DA) – intensifies the damaging effects of an abnormal brain protein linked to Alzheimer’s disease.
For this ‘honesty experiment’, research from the University of Notre Dame, Indiana, studied 110 individuals aged 18 to 71 over a 10-week period.
Each week, the participants visited a laboratory to complete health and relationship measures and to take a polygraph test assessing the number of major lies and white lies they had told that ...
